A very luxurious and filling sweet treat which doesn’t need baking!
100g Raisins or Sultanas
100g Unsalted Butter
150g PURE GF Dark Chocolate Drops
150g Milk Chocolate (chopped into small pieces)
120g GF Biscuits/ GF Shortbread (broken into chunks/crumbs)
200g White Chocolate (chopped into small pieces)
100g PURE GF Dark Chocolate Drops
100g Milk Chocolate (chopped into small pieces)
20cm square baking tin, lightly greased
1. Line a 20-21cm square tin with baking paper.
2. Melt 150g each of the dark and milk chocolate along with the butter in heatproof bowl over a pan of hot water (or microwave gently) until completely melted, then stir in the raisins, cranberries and the biscuit pieces. Spoon into the prepared tin and smooth the top. Put in the fridge for 1 hour, until firm.
3. Melt the remaining dark, milk and white chocolate separately, then blob over the top and swirl together. Leave to set in the fridge for at least 4 hours.
4. Allow to reach room temperature before cutting into squares with a warm knife, this helps prevent the chocolate coating from shattering.
