Recipes › GF Greek Style Courgette Slice
Perfect side dish or canapé for the summer
400g Courgettes, (trimmed and coarsely grated – about 2 medium ones)
1 Onion (finely chopped)
5 Eggs, beaten
130g Pure GF Brown Rice Flour
125ml Extra Virgin Olive Oil plus extra for brushing
100g Feta Cheese, crumbled
7 Fresh Dill Springs, finely chopped (approximately 3-4 tbsp, if using dry dill – add only 1 tbsp)
1 tsp Dried Oregano
½ tsp Pure GF Baking Powder
½ tsp Salt
1/3 tsp Ground Black Pepper
1. Preheat oven to 180°C/360°F/Gas Mark 4. Brush a 20 x 30 cm baking tin or casserole dish generously with olive oil.
2. In a large bowl, combine all the ingredients and mix thoroughly. Pour into the prepared dish and bake in the oven for 35- 40 minutes or until well browned on top and nice and firm.
3. Remove from the oven and loosen the edges with a knife. Cool briefly before cutting into squares and serve using a spatula to dislodge it from the bottom of the dish.
