Delicious pancakes which will make a tasty breakfast or a light supper - add your own fillings or simply enjoy them as they come.

Ingredients

2 cups PURE White Teff Flour 1kg
1 tbs PURE Baking Powder
1 tbs arrowroot
½tsp sea salt

2 tbs unrefined corn oil
2¼ cups fruit juice (apple and pear work well)
1 tbs vanilla


Preparation Method

  1. Combine the dry ingredients in a bowl (sift and then whisk)
  2. Add all of the wet ingredients and mix thoroughly with a whisk or spoon to form a smooth batter
  3. Brush a large frying pan with oil and heat until nearly smoking
  4. Add a ladle of batter to the hot pan and swirl to spread it evenly
  5. Leave to cook and then flip it to cook the other side
  6. Serve hot with your favourite filling
