Recipes › Lavender spiced honey madeleines
These quick and easy GF treats have a delicious twist and not too many ingredients! Recipe makes 12 and is courtesy of Donna Hay.
150g plain flour (Pure multipurpose or blended flour)
1/2tsp GF baking powder
55g caster sugar
1 tsp dried lavender
80g unsalted butter, melted
1 tbsp honey
1 tsp vanilla bean paste
FOR THE LAVENDER SUGAR GARNISH:
110g granulated sugar
2 tsp dried lavender
Prehesat the oven to 180C/Gas 4 and prepare the lavender sugar to give it time to infuse, by rubbing the two ingredients together with your fingertips.
Place the flour, baking powder, lavender, eggs, butter, honey and vanilla in a large bowl and whisk until smooth.
Spoon the mixture into alightly greased madeleine tin. Bake for 8-10 mins or until puffed and golden. Remove from the tin and coat withthe lavender sugar whilst still warm. Allow to cool before serving.
