Apple and Ginger Crumble

Ingredients

For the crumble:
100g Rice Flour (White or Brown)
100g Light Brown Sugar
100g Butter (cold, diced)
50g GF Porridge Oats
50g Toasted Almond Flakes
1tsp Ground Ginger

For the filling:
6 Bramley Apples (peeled and sliced)
30g Light Brown Sugar
1 tsp Ground Ginger

Method

  1. Preheat oven to 180°C/360°F/Gas Mark 4.
  2. Toss together the apple slices, ground ginger and sugar and pop it all in a heatproof dish.
  3. To make the crumble, cube the butter and toss with the flour. Cut into the flour with a cutlery knife until the butter is in small pieces. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs with a few larger pieces of butter. Add the sugar, oats, ginger and almonds and mix it well.
  4. Tip the crumble mixture over the fruit without pressing down. Place on a baking tray to catch any drips, and bake for 35 to 40 minutes, or until golden and bubbling. Serve Apple and Ginger Crumble with hot vanilla custard, cream or ice cream.
