Apple Spice Muffins

Ingredients

220g/7oz Pure GF Rice Flour (50/50 white and brown)
110g/4oz Fine White Granulated Sugar
170g/6oz finely chopped apple pieces
60g/2oz Pure GF Potato Starch
60-85g/2-3oz Raisins, Sultanas or chopped nuts (optional)
30g/1oz Pure GF Tapioca Flour or Pure GF Cornflour
3 tsp Pure GF Baking Powder
1tsp Pure GF Xanthan Gum
1 ½ tsp Mixed Spice (adjust to taste)
Pinch of Salt
180-210ml Milk (could use Soya or Rice Milk)
3 fl oz Vegetable oil or 85g/ 3oz Butter (melted)
2 eggs

Topping (Optional)
3tblsp soft brown sugar
60g/2oz Chopped Walnuts

Method

  1. Preheat oven to 200°C/400°F/Gas Mark 6. Prepare muffin tins.
  2. In a large bowl, sift together at least twice all dry ingredients.
  3. In another bowl, beat eggs with a fork until aerated.
  4. Stir in apple pieces and milk, followed by oil/melted butter.
  5. Pour all wet mixture into the dry mixture. Stir until evenly combined before adding fruit/walnuts during final strokes. This batter is thicker than most as apple releases its moisture while cooking.
  6. Spoon into tins or baking cases. Sprinkle the Apple Spice Muffins with topping if desired.
  7. Bake for approx. 20-25 mins until tops are lightly browned and quite firm.
